Michelle’s Orange, Cranberry & Walnut Loaf
Ingredients
- 2 cups of Plain Flour
- 1 cup of sugar
- 1 tsp of baking soda
- 1 tsp of baking powder
- ¼ tsp of freshly grated nutmeg
- ¼ tsp of ground ginger
- 2 tbsps of melted butter
- 1 egg
- ½ cup freshly squeezed orange juice
- ½ cup of chopped walnuts
- 1 cup of chopped cranberries ~ fresh or frozen
- 4 tbsps of water

- Flours used: Matthews Cotswold Plain Flour
Orange, Cranberry & Walnut Loaf Baking Method:
- Put all dry ingredients into a large bowl and mix together with a fork.
- Add to the dry ingredients the orange juice, egg, melted butter and water. Mix all these ingredients together well by hand.
- Then add the cranberries and walnuts.
- Grease & tin a loaf tin & spoon mixture in.
- Bake at 170 degrees C for an hour.
- I double up this recipe as it freezes well. If you like you can ice it for an even more festive look.
